Foxy Brown is all about making your face dance and your tongue tap. Big body, unusually funky and sweet notes dominate what is a syrupy flavour explosion. We are not interested in balance, we are trying to dial up the funk with this one.

This time we are featuring a single estate Colombian – La Cristalina produced by Luis José Valdés in Caldas.  The coffee is a washed blend of Caturra, Bourbon, and Castillo varietals that has undergone an 18 hour fermentation and another 48 hours after depulping, Grown between 1460 and 1790 masl

Our seasonal projects use fresh crops of specialty grade beans and may be a blend or single bean depending on the season’s produce.

Flavour notes

Espresso:

Stone fruits,  Hellava Juicy, Cane Sugar.

Milk:

Super sweet in the milk, full bodied, caramel.

Recipes

We suggest a 1:2 ratio (20 gm ground beans per 40 extracted liquid) and a 28 to 30 second extraction.
